Production location : Vigneti di Aquileia, Località Colombara
Type of land : Silty loam with high percentage of clay.
Age of the vines : 35 years

Aging : 100% French oak 12 months plus 12 months in big oak an one year of aging in the bottle
Description : The grapes are harvested around the last third of September and placed in small crates to dry for about 5 weeks in an old slab. Once the right degree of dryness is reached, we proceed with the destemming and it is left to ferment in wooden barrels with a capacity of 5 hl for about 20 -40 days depending on the year. Then it is separated from the pomace and left to settle for a few weeks and then refined for 18-24 months in suitable wooden barrels of 2.25 hl capacity.
Organoleptic properties : A rich ruby red color with wild berries and black currant on the nose joined with a light spice coming from the oak.
Pairings : We recommend a combination of grilled red meats, beef or game beef. This wine, given its dryness, is also suitable for after supper accompanied by chocolate.
