Vinification technique : Harvested by hand in the cottage, the grapes after being pressed with stems follow a process of clarification and fermentation at 15 degrees. In the following spring the draught is done and the bottles remain in sur lie aging for 24 months.
Organoleptic properties : Straw yellow with golden hues, enhanced by fine perlage.Fruity white peach, plum and puffs of sage. Rich, full palate drags into a long finish with hints of grapefruit.
Pairings : Ideal both as an appetizer and with baked fish.
