Description : At harvest, the grapes are delivered in small bins and immediately gently pressed. The must ferments slowly at controlled temperatures (18-20°C) in wood barrels 300L . The wine is clarified through natural sedimentation of particles.Mosaic Blanc matures separately in wood barrels , at constant lees contact until the end of May. After blending and bottling, the wine matures in the bottle for at least another 3 months. Total maturation period is thus at least 14 months.
Organoleptic properties : Intense yellow color and initial notes of yellow flowers, juniper, tropical fruit and peanut butter with a slight finish of vanilla. Warm and smooth on the palate with great concentration and a long and delicate finish.
Pairings : Pairs well with first courses of fish, barley soups, fresh cheeses, raw ham of San Daniele and the classic Friulan ‘frico‘ plate with polenta.
