Winemaking technique : drying 3 months in wooden crates. maceration on the skins for two days and fermentation in barriques, frequent batonages at the end of fermentation process
Aging : 100% barrique
Organoleptic proeprties : Followed by a natural aging process of about 3 months in wooden cases, the grapes dry and their properties become concentrated. The juice then ferments in barriques where it stays in its own yeast. It turns into an amber yellow color and becomes quite intense on the nose with a persistency of florals and fruit such as figs with notes of spices. It has an intense and persistent finish as well.
Pairings : It is a dessert wine. Excellent at the end of a meal, blends perfectly with dried desserts, fatty or grassy cheeses and dry pastries.
